Santa’s Winter Wonder Cakes

We’ve gone early! It’s still November, but James and I are making Christmas themed cakes already! Santa’s Winter Wonder Cakes from The Bottled Baking Co. They look great, delicious muffins speckled with red, green, and white sugary sparkles.

As usual, James stirred all of the ingredients together, which made a very sticky cake batter that got everywhere again! James was keen to make sure we left some in the bowl for him to ‘quality check’ afterwards!

He then carefully helped spoon the mixture into the muffin cases, making sure that we had enough for all 12 cases (two different styles as we didn’t have enough!) and that they were roughly even, and then supervised them going out to the kitchen to go into the oven. Dad put them in the oven, because as James remembers from ‘Big Cook, Little Cook’, the oven is ‘Hot! Hot! Hot!’

You will need:

  • Santa’s Winter Wonder Cakes mix
  • 2 large eggs
  • 140g Very soft butter
  • 150ml Milk
  • 8 Deep fill muffin cases or 16 cupcake cases (we used a combination of the two!)

Method:

Preheat oven to Fan 170, Conventional 180, Gas 5.

Pop your muffin/cupcake bases on your baking tray

Add all of the ingredients to a bowl and mix until a smooth batter is formed.

Spoon mixture in to your cases until 1/3 to 1/2 full.

Bake for 20-23 minutes until golden brown.

Cool, decorate, and eat! (Or, if you can’t wait to eat them, skip the decorating!!)

So here it is! Merry Christmas! Everybody’s having fun! Well James and I certainly were as we made these delicious cakes! They are as scrummy as they look and have got Christmas off to a (sleigh) flying start for us!
