Fun and Easy Betty Crocker Rainbow Cookies

We’ve made these colourful and tasty ‘Betty Crocker’ cookies before, they are a firm favourite! We haven’t done any baking for a little while so we thought we would make them again this afternoon!

Just like each time we’ve made these, James carefully mixed and stirred all of the ingredients together, including the dry mix, melted butter, and an egg. We kneaded the dough and measured it out into 16 balls, which we then flattened a little. James added the smarties to each cookie. He then supervised them going out to the kitchen to go into the oven, watching carefully from his sofa. Dad put them in the oven, because as James remembers from ‘Big Cook, Little Cook’, the oven is ‘Hot! Hot! Hot!’

Rainbow Cookie Mix instructions from ‘Betty Crocker’

You will need:
1 ‘Betty Crocker’ Cookie Mix
1 Large Egg
80g Melted Butter
1 Baking Trays.

Method:

Preheat oven to Fan 160, Conventional 180 degrees, Gas 4.

Lay greaseproof paper on your tray.

Stir cookie mix, butter and egg in a large bowl with a wooden spoon until just combined. Use your hands to fully mix to form a soft dough.

Measure large tablespoons of cookie dough and roll into balls. Place on a baking tray, spacing about 5cm (2 inches) apart.

Add the smarties to decorate and give the cookies their ‘rainbow’ makeover!

Bake for 14-18 minutes until golden brown. Cool on the baking tray for 10 minutes then gently remove onto a wire rack to cool completely..

We remembered how much we enjoyed making these before, so these were great fun to make again to get us back to baking after a few weeks. We didn’t let them cool down completely before trying them, as warm cookies are the best! We will certainly be having another try at this recipe! Well done James!
